Tonight was one of those “what’s for dinner?” conundrums.
With my kitchen as my forest, I played the role of hunter/gatherer.
Scavenging, I found several usable ingredients. In my freezer: homemade veggie dogs, vegan veggie burgers, and vegan bacon. In my fridge: the building blocks of guacamole. Sitting on my fruit plate: a pair of pitiful peaches.
Not wanting to leave anyone behind, all were invited to dinner.
Anthony wanted veggie dogs and I wanted a veggie burger. Crumbled vegan bacon found its way onto both of our dishes.
And so did this, super-delicious, peach guacamole.
No one was left out, and all were happy.
Success? Ohhh, yes. Success.
And I didn’t even have to change out of my pjs.
Peach Guacamole
Ingredients
2 ripe avocados, diced
1 ripe peach, diced
1 tomato, diced
2 green onions, sliced
1/4 cup cilantro, chopped
the juice of 1/2-1 lime (depending on how tangy you like it and/or how juicy your lime is) + 1/4-1/2 tsp zest
1 tsp cumin powder
1/2 tsp garlic powder
1/8 tsp cayenne pepper
salt and pepper, to taste
Directions
1. Combine the avocado, peach, tomato, green onion, and cilantro in a medium-sized bowl.
2. Add the lime juice and zest, cumin, garlic powder, cayenne pepper, salt, and pepper.
3. Gently stir to combine.
