The summer has finally arrived! And with it, has brought lovely weather along in its handsome side satchel.
Warm, sunny, weather means lovely fresh produce and delicious summery cocktails.
Although I’m certainly not one to turn my nose up at a convenient, preferably-cold, beer, sometimes it’s more fun to get fancy.
These fresh cherry mojitos take full advantage of the summer bounty as they introduce a whole new flavour profile to this popular summer drink.

…perfect for a weekend (or a weekday evening?) stint on the balcony.
Oh, and the cherry syrup would be lovely spooned over vanilla frozen yogurt or atop pancakes as an alternative to maple syrup.
Fresh Cherry Mojitos
Adapted from Eat, Live, Run
1/2 cup sugar
1/2 cup water
1 lb sweet cherries, pitted and roughly chopped
for assembly and serving (for each glass)
8-10 fresh mint leaves
1/4 cup cherry syrup
juice of 1 lime each
2 oz light rum each
8 oz sparkling water each
1. Combine the sugar and water in a small pot on the stove. Bring to a boil and stir so that all the sugar dissolves. Remove from heat and add fresh, chopped cherries. Stir and refrigerate for about 2 hours, or until chilled. You can make this cherry syrup ahead of time and keep covered in the fridge.
2. When you’re ready to make your mojitos, squeeze the juice from one whole lime and 8-10 mint leaves into each glass. Using the end of a wooden spoon (or a fancier, more proper tool) muddle the mint with the lime juice.
3. Add 1/4 cup of cherry syrup to each glass and muddle again.
4. Add 2 oz rum and about a cup of sparkling water to each glass and stir. Add ice. If desired, serve with additional mint and cherries.
