This past week was crazy. It was incredibly busy and choc full of things that caused me to experience heart palpitations. Monday was my typical 14-hour, 3 job, work day, I was observed and evaluated by my student-teaching supervisor on Tuesday, I had my very first job interview for a major school board on Wednesday, I had a soccer tournament all weekend, and I hosted my lovely younger brother’s birthday dinner last night (the only exception to the week’s heart-palpitation trend).

And I have had Lewis Carroll’s “Jabberwocky” stuck in my head for the past three days.

Note to self: use a less catchy poem to teach the importance of delivery in public speaking.

With such a crazy week, it seemed only natural that I would whip up this little delight.

 CRAZY Feta

I had been waiting for an opportunity to make this crazy feta, and my brother’s birthday was just the ticket.

It’s spicy, slightly tangy, and deliciously feta-y.

Served alongside pita wedges, hummus, olives, and veggies, it’s a real winner.

Crazy Feta

Adapted from How Sweet It Is

Ingredients
12 oz feta cheese
3 whole jalapeno peppers
1/4 cup olive oil
1 bulb garlic
the juice of half a lemon
the zest of half a lemon
salt and pepper

Directions
1. Preheat oven to 400 degrees. Chop the top off the garlic bulb and drizzle it with a teaspoon of water. Wrap it in foil and roast for 25-30 minutes, or until garlic is golden in color.
2. Place the jalapenos on a baking sheet and stick them in the oven with garlic. Remove the jalapenos once their skins are charred.
3. Once jalapenos are cooled, remove skins, cut in half and discard the seeds. Chop into small pieces. Wash your hands well before touching your face!
4. In a large bowl, crumble the feta. Add chopped jalapenos, the zest of half a lemon, and the juice of half a lemon. Squeeze the roasted garlic out of the bulb directly into the feta.
5. Add 1/4 cup of olive oil and mash with a fork. You want the feta to be a bit “wet” – the consistency is a cross between a spread and a dip. Taste the feta and season with salt and pepper.

This was another success in a succession of successes this week: I got a fabulous student-teaching evaluation, I charmed the pants off of my interviewers, we won several of our tournament games, and the feta was delicious. = good week.

      Thanks, Joanne! Hopefully they also like spice! The jalapenos give it quite a kick. If not, just opt for fewer of the jalapenos. Enjoy :)
